Coyne and Pinckney Recipe Time!

pound cakePound Cake is a classic Southern dessert (or breakfast) and is a recipe dear to many of my relatives.  However, like chicken salad, everyone has their own recipe for Pound Cake success!

While I’ve eaten many a slice of delicious pound cake in my time, I had never attempted it on my own.  I had many questions – Crisco? Shortening (is that butter?) Sour Cream version?

In the end, I went with the most simple recipe I found (which, pound cake is simple and cheap on ingredients).

1 cup of butter (2 sticks)

1 3/4 cup sugar

2 cups flour

1 1/2 tsp vanilla extract

5 large eggs

1/2 tsp baking powder

The recipe I had involved sifting the flour, which was often my duty when helping my grandmother make cake.  However, lacking a sifter, I left that step out.

Cream the butter with an electric mixer on low speed.  Slowly add sugar and beat until light and fluffy.

Add the eggs one at a time, alternating the flour mixture and mixing on a low speed for a minute after each egg.  (I tried to follow this process, the batter was very creamy!)

Add the vanilla and beat until creamy.  Add to a greased pan. Bake for an hour and 5 minutes on 300 degrees and let sit in the oven for an hour.

Next time – I’ll attempt my grandmother’s lemon sugar icing that is divine! For now, the pound cake!
