Southern Cakes: A Delicious Addition to your Shelf!

southern cakesWe recieved this book  (along with a cake stand) as a wedding gift and it has been a gem!  I’m not the Martha Stewart baker, in fact I’m the opposite.  I  do use the break and bake cookies and cake mixes.  Until I started using Southern Cakes!

The Red Velvet Cake recipe is our “special” cake around here for birthdays and anniversaries.  Here are the ingredients:

2.1/2 cups all-purpose flour

1/2 teaspoon salt

1 cup buttermilk

2 tablespoons cocoa

One 1 oz. bottle red food coloring

1 cup (2 sticks) butter, softened

2 cups sugar

2 eggs

1 1/2 teaspoons baking soda

1 tablespoon white or cider vinegar

Heat oven to 350 degrees and grease 2 9-inch round cake pans and line with parchment or wax paper.  Combine the flour and salt and mix well.  Stir the vanilla into the buttermilk.  Combine the cocoa and red food coloring in to a thick paste.

Beat the butter at a low speed for 1 minute, in a large bowl.  Add the sugar and beat for about 3 to 4 minutes.  Add the eggs, one at a time and beating after each one.  Add the cocoa/red food coloring paste and beat until the color is mixed evenly.

Add a third of the flour mix and beat until just mixed.  Add half of the buttermilk/vanilla mixture and beat until mixed.  Add another third of the flour and the last of the buttermilk mixture.  Beat until mixed and repeat with the last of the flour mix.

In a different bowl, combine the vinegar and baking soda.  Working quickly, stir with a wooden spoon and fold into cake mixture.  Scrape the batter into the pans and bake for 20-25 minutes.  Cool for at least 15 minutes.

There! It is pretty easy and Oh! So! Delicious! (unfortunately I haven’t attempted the homemade frosting that accompanies this recipe, but I will be trying it next time!)

This is a fabulous book and gift for any person who loves to bake and perhaps is new to cooking! I find it easy to use and with yummy results.  Next on the list…the Bourbon Pound Cake :)

    Red Velvet is one of my favorites! Our wedding cake was a red velvet cake. People were so surprised when we cut it and they saw that it was red velvet. Now this was many,many, many years ago. It is done more now. I would love to have the recipe for the frosting.
